Protein-Packed Pumpkin Dark Chocolate Muffins

Ooo la la! It’s finally starting to feel like fall and I am LOVING every bit of it! One fun fact about me, I love pumpkin flavored treats but cannot stand pumpkin spice. The spice part is just too much for me!

Luckily, there are plenty of ways to get my pumpkin fixing in each season that don’t include the spice!

Baking is one of my favorite things, especially if I’m able to come up with a new recipe! I’m so proud of this fun one, which includes pumpkin, chocolate, and is so easy! What could get any better?

Many of you know I’m on Weight Watchers. I’m always looking for treats that help me stay on track. These muffins are oh-so good. Since they’re packed with protein, they keep you fuller, longer. And each muffin is only 4 points!

Begin with one large bowl or your handy stand mixer. Mix together 2 cups of Kodiak flapjack mix (or another alternate), 1 cup skim milk, 1 egg, 1/3 cup brown sugar, 1 can of pumpkin puree, and about 1-2 tablespoons of pumpkin pie spice.

Once the batter is mixed evenly, scoop into 12 greased muffin tins. Press in 8-10 dark chocolate chips per muffin. (If you leave out the chocolate chips, the recipe is lowered to 3 smart points)

Bake at 350′ for 15-20 minutes. You know they’re done baking if they spring back to you after gently pressing your finger into the top!

Let cool and enjoy!
