Vanilla Cloud Iced Coffee

If you haven’t seen the new trend going around of the whipped coffee, you’re definitely missing out. I mean, I didn’t see it until about a week ago, so I guess I’m part of the population that had never heard of it until recently.

I’m a HUGE coffee lover, in case you didn’t know that already. So when I finally saw this going around, I had to jump on the bandwagon and try it.

And can I just say, OHMYGOSH it is amazing. One of the struggles I’ve had when trying to make coffee at home is that it doesn’t usually end up tasting like the ones at cute, quaint coffee shops. But this one is completely different.

I’m going to quit rambling and just show you how to make this quick, easy, and delicious morning caffeinated goodness.

First, throw all the ingredients in a bowl or stand mixer. You’re going to need 2 TBSP of instant espresso (most recipes use instant coffee, but I like using espresso instead because of it’s strong flavor and caffeine kick), 1 TBSP of Truvia or another zero calorie sweetener, 2 TBSP boiling water, and 1-2 TSP of vanilla.


Keep whipping until the mixture looks fluffy and a bit like peanut butter.

Ready for it? THAT’S IT. I’m telling you, this is the easiest recipe in the entire world. Easier than those peanut butter and jelly sandwiches your momma used to pack in your lunch box.

Finally, grab a fun glass and a metal straw (because we all know coffee tastes better when it’s Insta worthy), throw in some ice cubes, a large splash of milk, and top it with this glorious whip.
